Zucchini Boats

Ingredients:
2 zucchini
1 pkg cherry tomatoes or other
Parmesan cheese OR Mozzarella cheese, shredded (optional)
Organic olive oil
Salt & Pepper, to taste
Directions
- Preheat oven to 350 F degrees. Lightly grease a baking sheet with coconut oil.
- Chop the ends off of zucchini, then slice them longways. 3 slices out of each zucchini. You can do more or less depending on the size of zucchini.
- Slice tomatoes in half and toss in a bowl with a little olive oil. Just enough to be lightly coated (about 1 TB).
- Arrange zucchini slices on the baking sheet and drizzle with olive oil (could maybe try melted butter instead?). Place tomatoes along the zucchini slices. Sprinkle with salt & pepper. Sprinkle Parmesan or mozzarella cheese on top.
- Bake for about 30 minutes, until zucchini is tender and cooked through.
