Roasted Cinnamon Sugar Chickpeas

Ingredients:

1 (15 oz) can chickpeas (aka garbanzo beans)
1 TB organic coconut oil
1 tsp to 1 TB cinnamon, depending on desired taste
2 tsp to 2 TB organic coconut palm sugar, depending on desired taste


Directions

  1. Preheat oven to 400 F degrees. Lightly grease a baking sheet with coconut oil.
  2. In a strainer, rinse and drain the chickpeas well.
  3. Spread them out on a separate baking sheet or on some paper towels. Pat dry with paper towels. The drier the chickpeas, the crunchier they will be. It's best to let them sit uncovered about 10 minutes to dry. (You can take the skin off the chickpeas if you want.)
  4. Place chickpeas into the oven and roast for 15 minutes. Remove from oven and drizzle with 1 TB organic coconut oil. Use a spatula or spoon to stir the beans around to evenly coat them.
  5. Mix cinnamon and coconut sugar together in a small bowl and sprinkle over the beans. Mix around to coat the beans.
  6. Put chickpeas back into the oven and roast for another 15 minutes. Enjoy!
  7. Store at room temperature.
